Ingredients for about 10 pieces:
First, let’s prepare the batter:
200 g of all-purpose flour (you can also use gluten-free flour)
10 g brewer’s yeast
In a bowl, put the flour, brewer’s yeast, salt,
and little by little from the beer.
Mix well until a batter forms a thick consistency and let it stand aside.
And now the Zucchini flowers:
10 fresh zucchini flowers from the market
150g ricotta cheese
2 tablespoons grated Parmesan cheese
50 g mozzarella or provola
salt at taste
1 egg yolk
How to prepare the filling:
Cut the mozzarella into small strips
Then add salt, pepper, and the egg yolk to the ricotta. Mix everything well.
Now you can start stuffing the zucchini flowers,
by adding a strip of mozzarella and a spoon of the ricotta filling.
After that, emerge the stuffed pumpkin flowers in the batter
and fry them in the hot oil until they turn golden all around.
Drain them from excess oil by using kitchen paper.
