Calamari (squid) Sauce or Calamari Stewed with Cherry tomatoes is an exquisite summer dish from Neapolitan cuisine. It could be enjoyed as a main course seafood dish or with pasta for a tasty first course. This dish is easy to prepare with just a few ingredients. You can use giant calamari or calamaretti (small squids). This dish is between a stew and pasta sauce. If you prepared it in advance, it would taste even better We prefer to use fresh calamaretti, but you can also use the frozen.

Ingredients:
500gr Calamaretti
300g Cherry tomatoes
1/2 Glass of White Wine
One clove of garlic
Chili pepper q.b.
Evo Oil
Salt q.b.
Treated parsley
A sprig of lemon thyme

Directions:

First, if you buy fresh calamari, ensure they have washed well. If you get giant calamari, you must cut it into rings.

Heat the oil in a large pan, and sauté the garlic, the chilly, and lemon thyme sprig.

After that, add the calamaretti, browning them for a couple of minutes.

Then add the chopped parsley and cook everything for a while.

As soon as calamaretti change their color into red, blend them with the white wine. Let evaporate for a while, and add the cherry tomatoes, cut in half.

Add a 50ml of water and cover the pan with a lid, and let it cook over low heat for about 25 minutes.
