Italian Recipe Octopus salad with parsley
Octopus salad is a fresh and summery dish. It is one of the favorite seafood appetizers in Italy.
Needed Ingredients for two persons:
One medium-sized octopus (fresh or frozen)
Chopped parsley 10gr
Juice of one lemon
Extra virgin olive oil 30gr
Salt to taste
2-3 cherry tomatoes
If you have chosen fresh octopus, you should clean it well first or even ask the fishmonger to clean it for you. Then pound the octopus with a meat mallet for at least 10 minutes; this will make the meat more tender. Cook the octopus in a pot of salted water for about 40 minutes over medium-low heat.
When ready, drain the octopus and place it on a board, cutting it into small pieces.
Place the chopped octopus in a salad bowl, and season it with oil, salt, pepper, lemon juice, chopped cherry tomatoes, and chopped parsley. Leave the salad in the fridge for an hour to season.
The octopus salad goes very well with a glass of chilled white wine.
