This Heirloom tomato salad is our family favorite and is the perfect solution for an excellent nutritious meal on warm summer days. It is vegan, light, flavorful, and easy to prepare. Seasoned with olive oil, celery, oregano, fresh basil, onion, and garlic, this Heirloom tomato salad is a dish full of summer flavor and can be enjoyed as a lunch or as a side to your BBQ.
The delicious Heirloom tomatoes are best in Southern Italy, especially in Sorrento, as they have ideal growing conditions, Mediterranean climate, and volcanic soil.
Two Heirloom tomato
One small red onion or one shallot, cut into two
One garlic clove
50 ml. of water
The first thing first is to wash well the tomatoes, celery, and fresh basil.
Then cut the heirloom tomatoes into wedges in a salad bowl.
Add the garlic, onion/shallot, basil, oregano, salt, oil, and water. Mix well all the ingredients, cover the bowl and leave it to rest in the fridge for a while. Before serving, take out the garlic and the onion/shallot.
You can leave them in the salad minced and sliced if you are a garlic and onion lover.
Serve with a slice of toasted rustic bread.
