Directions for the vegetable broth:
Cut all the vegetables in half, put them in a pot with water, and let it cook for about an hour. At the end of cooking, when all the vegetables are well boiled, add oil and salt. Once the broth is ready, pass it with a filter and set it aside.
300gr. Ground Chicken meat and Turkey
Abundant black pepper
Thinly chopped parsley
A nice handful of Parmesan cheese
Two egg yolks
Directions for the tiny meatballs:
While the broth is cooking, prepare the dough of the meatballs. Put all the ingredients in a large bowl and mix well until you get a soft dough.
Simmer the broth. With the help of a spoon or wet hands, form small meatballs and put them directly into the broth.
Boil everything for about 10 minutes.
