Codfish is an excellent source of omega-three fatty acids. In addition, it contained lean protein and vitamin B-12. Cod is known for being a little higher in sodium, but it can be a very healthy option if you eat it in moderation.
Ingredients For two servings:
Four codfish filets
Ten cherry tomatoes
Two garlic cloves
15 black olives
Capers *you need to wash them from the salt
Four spoons of Olive oil
Freshly chopped parsley or coriander for garnish
The first thing first is that you need to boil the codfish 🐟 for at least 10 minutes.
Then in a big pan 🍳 , heat the olive oil. Once the oil is ready to light fried the garlic cloves, cherry tomatoes cut in half, olives, capers (pre-washed), and two pinches of oregano.
Cook till the tomatoes become soft. Then lay the codfish filets out on the sauce.
Cover and cook for ten more minutes on a low fire, or the cooking time will depend on the thickness of your codfish filets.
The fish is ready when it flakes easily with a fork.
Once it is ready, garnish with the fresh chopped parsley or coriander.
Enjoy accompanied with a glass of excellent wine 🍷
Buon appetito 😊
