Alici in Tortiera is a cherished traditional dish from Naples in the Campania region of Italy. Every family has its unique twist on this dish, making it a beloved and versatile culinary tradition. This simple, flavorful, and budget-friendly recipe features fresh anchovies, renowned for their omega-three and calcium-rich profile. Here is the recipe:

Ingredients:

  • 500 grams of Fresh Anchovies

  • 2 Small Shallot

  • Garlic

  • Oregano

  • 2-3 mint leaves

  • Olive Oil

  • White vinegar

  • Salt at test

Directions:

  • Rinse the fresh anchovies under cold water and pat them dry. Remove the backbone carefully, or opt to remove the heads.

  • Than cut the shallot and the mint leaves into small pieces.

  • Put the oil and the finely chopped shallots into a frying pan, and add the finely chopped mint leaves. Next, add the garlic cut it into fine slices, or if you’re not a fan of garlic but like the flavor, leave the glove whole, as we did.

  • After that, place the clean anchovies in the frying pan, then add a little oregano and vinegar. The vinegar needs to cover in half the anchovies.

  • Cover with a lid and let it cook for 10 minutes.

  • Then, remove the lid and cook for another 10 minutes. Mix occasionally.

  • And Voile- Our anchovies in skillet are ready to be enjoyed.
