Ingredients for five servings:

500 ml Tomato Sauce

500g Gnocchi (homemade or from the grocery)

250 g Mozzarella

70g Grated  Parmesan Cheese

Fresh basil

Directions:

  • First of all, we need to prepare the tomato sauce. So here is the recipe for the most delicious tomato sauce.

  • If you choose mozzarella for your Gnocchi Sorrento style, it must be well squeezed before using it for the dish; otherwise, the gnocchi will become more liquid. You can remove the mozzarella from the water a day or two before using it.

  • Then boil the gnocchi in salted water. Your gnocchi is ready to be drained as soon as all get to the surface.

  • Then In a baking pan or casserole – or better in a glen pan, put the gnocchi and some of the tomato sauce, and mix all gently.

  • Then add the rest of the tomato sauce. Finally, add some mozzarella cut into small pieces, and mix all again.

  • At last, Sprinkle with the grated Parmesan and add the rest of the mozzarella and the basil leaves chopped into small pieces.

  • Then splash  the Gnocchi Sorrento style with a fine stream of olive oil. As they say in Italian, “un filo d’olio di olive.”

  • Bake your Gnocchi Sorrento style in a preheated oven at 200°C for 10 minutes.
