Squids with potatoes is a traditional dish from southern Italy or, more precisely, from the Amalfi Coast. Seafood is one of my favorite dishes, not only because it is delicious, but because these recipes are quick and easy to prepare. Squid and potatoes are second-course dishes perfect for the hot summer days.
Ingredients for four people:
1kg of Squid
Four medium-sized potatoes
Three garlic cloves
A glass of white wine
Three cherry tomatoes
Three spoons of EVO oil
Two scoops of Tomato paste
Chili pepper q.b.
Salt to taste
Chopped parsley
Directions:

Peel and dice the potatoes (we used potatoes with pink skin).

Wash and clean the squids well and cut them into rings.

In a pan, add the oil and brown the garlic.

After that, add the squid rings. Cook them for a while, remove the garlic, and pour the wine.

As soon as the wine evaporates, add the potatoes and the cherry tomatoes cut in half. Next, add a little water, occasionally stirring, two spoons of the tomato paste (the tomato paste is optional). Cover with a lid and cook until the potatoes are ready.

Add salt to taste.

Sprinkle with chopped parsley and serve while hot.
