Tagliatelle Sea and Mountains, or “Mare e Monti” as we call it in Italy, is a quintessential dish of Italian cuisine. This culinary masterpiece derives its name from the harmonious blend of sea and land flavors. Ingredients:
- 500 g Tagliatelle Pasta
- 500g Clams
- 300g Mushrooms
- 200g Shelled prawns
- 6/7 Cherry tomatoes
- Chopped Parsley
- Chili pepper at the taste
- Two cloves of garlic
- 50ml. of cream (optional)
- 1/2 glass of White wine
- Evo Oil
- Salt
Directions:
Prepare the Clams:
- Place the clams in a pan, cover them with a lid, and cook them over medium heat until all have opened.
- Shell the clams, discarding any that remain closed.
- Reserve a glass of the clam cooking water for later use.
Prepare the Mushrooms:
- Heat olive oil in a separate pan and add a garlic clove.
- Sauté the sliced mushrooms with some parsley and chili flakes to taste.
- Cook until tender; once it is done, remove from heat and set aside.
Prepare the Sauce:
- Heat olive oil in a different pan with a clove of garlic.
- Add the chopped cherry tomatoes and parsley, sautéing until softened.
- Stir in the shelled clams, white wine, and some reserved clam cooking water.
- Add the shrimp and cook until they turn pink and are cooked through.
- Add the sautéed mushrooms to the mixture.
Combine and Finish Cooking:
- Cook everything together for an additional 10-15 minutes.
- Remove from heat and set aside.
Cook the Tagliatelle:
- Boil the Tagliatelle pasta in salted water until al dente.
- Drain the pasta and transfer it to a large pan.
Assemble the Dish:
- If desired, add a splash of cream to the pasta.
- Pour the “Sea and Mountains” mixture over the Tagliatelle.
- Mix everything well to combine the flavors.
Serve:
